Brocoli Salad

Ingredients

* Brocoli (1-2 heads) cut off stems, use flower only
* 1 red pepper (though I used orange here)
* 8 slices of bacon or proscuitto
* 1 cup of unsalted sunflower seeds

Dressing

* 1/2 cup mayonaise
* 2 Tblsp. sugar (brown or white)
* 4 Tblsp. vinegar (or apple cider)

Directions

1. Fry up proscuitto/bacon and set aside.
2. Wash and cut brocoli and red pepper and place in bowl you are serving salad in.
3. Add sunflower seeds.
4. Tear bacon into small pieces and add to salad bowl.
5. Mix dressing and pour onto salad....
toss and serve!

Pear Prosciutto Pizza

INGREDIENTS

* store bought dough, or make your own:) for this recipe I am using store bought, yes you read that right and we live to tell:)
(or large pitas ,we cut open and use each half as mini pizzas, I use 4 large pitas, split those and lets to the math......that equals 8! so good kiddies)

* 1 pear (any kind)

* 15-20 slices of prosciutto, thinly sliced (or more of less, do what you want)

*2 tblsp. of pine nuts (optional)

* honey

* 3-4 tblsp. of "Renee's Cesar Salad Dressing" (this is galactose free-of course!) that amount is for 1 pizza, so double it because I forgot, I make 2 pizzas with this recipe.

(when I haven't had it, I sauteed a clove of minced garlic in 2 tblsp. olive oil until soft and used that as a substitute spread for on top of the pizza)

* grated Parmesan chesse

DIRECTIONS

1. Pre-heat oven to 400 F

2. Cut the dough in half (I guess this is where a picture is good-ah well, you'll get over it)
this way I can make 2 thin pizzas. Sprinkle flour on the counter and roll out the dough until it is the shape of your baking sheets.

3. Spread the dressing all over the dough once it is on the baking sheets(3-4 tblsp. per dough)

4. Bake for 12-15 minutes. until bottom is golden brown.

Meanwhile......

5. Pan fry (gasp) the prosciutto...I fry it until the meat is a bit crispy)

6. Once the meat is done, brown pine nuts in the left over grease in the pan, yes you read it right:)

7. Thinly slice the pear.

8. Remove pizza, crumble prosciutto over pizza and use 1/2 of the pear for each pizza. arranging in a diagonal shape...its prettier:)

9. Sprinkle pine nuts and drizzle honey all over the pizza and top it with grated Parmesan.

10. Return pizza to the oven for 2-3 minutes until cheese has melted.


Serve!!!

We ate this the other night with a cucumber and black olive salad and a strawberry and kiwi salad. Mostly because that's what I could find in the fridge that needed to be eaten:)

Pear Avacado Salad with Sweet Potato Fries and Curry Mayo


one of my staple favorites!

INGREDIENTS

* 1 head of lettuce

* 1/2 cucumber

* 1 avocado

* 1 pear (any type)

* balsamic vinaigrette

* thin slices of Parmesan Reggianno

* 3-4 sweet potatoes

* 1/3 cup mayonnaise

* 1 tsp powered curry

Directions for Salad:

1. Wash lettuce (do I really need to write that? ) dry and chop leaves. Place into a bowl.

2. Slice cucumbers in quarters.

3. Peel avocado (duh!) and slice flesh into medium chunks.

4. Thinly slice pears.

.....kids if this takes you more than 5 minutes, you are falling asleep on the job!......

Meanwhile........

1. Pre-heat oven to 400 (or 425 F) I can never remember what temperature it works best on)

2. Drizzle olive oil on pan and peel sweet potatoes

3. Slice these up and coat them in the oil on the pan.

4. Bake for 30 minutes turning occasionally......this is where it gets tricky....keep an eye on them I check every few minutes to watch they are browning nicely. I love when they are crispy(ish)
on the outside and soft and sweet on the inside. Hope you do better than me:)

5. Mix mayonnaise and curry power together and let it sit for a few minutes.

Finally......

......mix lettuce, cucumbers, avocado together. Place sliced parmesan and black olives on top and finally drizzle balsamic vinegrette over it all.

* Don't forget the pears on the side as well as the sweet potatoes!!!!


btw........this is me cooking for a family of 7 so obviously you will need to alter that to suit who you are cooking for. I sound ridiculous! :)

Broccoli Soup


*1 pound of chopped broccoli

*2 diced potatoes

* 2 teaspoons of chopped garlic

* 1/4 of an onion (diced)

* 4 cups of chicken broth

* 2 tblsp. of butter
SEASONING:

# salt

# pepper

HOW TO DO IT

1. melt the butter in a saucepan.

2. Add in the garlic and onions, and cook until soft.

3. Add in the broccoli and potato, mix well and let cook for a while...5 min.

4. Add in the chicken broth.

5. After it boils, simmer for 10 minutes until the vegetables are soft.

6. Use a blender to mix the vegetables into tiny pieces

7. Pour the soup back into the saucepan and heat.

I grate parmasean regginano over each bowl and add croutons. Or we eat it with yummy bread too:)

Salmon Chowder


I love this receipe!
It is fast and easy and hearty...yum:)

Ingredients
2 cups potatoes cubed
1/2 cup carrots cubed
2 cups water
2 tblsp onion chopped
3tblsp margarine (lactose free-duh!)
3 tblsp flour
2 cups milk (I use rice or So Good Soy)
7 oz can salmon (I also make this soup if I have left over salmon,
in which case it is not canned:)
1/2 celery, sliced
Worcestershire sauce

Instructions
1. Cook potatoes and carrots in water until soft-do not drain

2. In separate saucepan, saute onion butter. Blend in flour, then
gradually add milk(I hope my kids remember how to do this
when they read it:)

3.Add vegetables with its water, with salmon
celery and Worcestershire sauce

4. Heat thoroughly

Salt and pepper
and
add more milk if it is too think.

start to finish 20 minutes:)

I also serve with fresh bread!

Easy Peasy Peanut Butter Cookies


1 cup peanut butter (I use an all natural version
you know, just peanuts)

1 egg

1/2 cup of brown sugar

that's it!!!

preheat oven to 325 F
and lightly grease a baking pan
bake 10-15 minutes

mix ingredients until smooth

scoop out small amounts with your fingers or a spoon
and press down onto sheet

i think this yields 24 bite sized cookies

I usually want to throw my face in these:)

Spring Maple Salmon



Spring Maple Salmon

1/3 cup of maple syrup
1 clove garlic, minced (I often use 2)
1 tbsp. dijon mustard (I used the kind with seeds)
2 tbsp. chopped fresh thyme
dash of salt and pepper

Line baking dish with parchment paper. It helps to fold the parchment up and over, tenting it over the fish slightly.
Coat 4 portions of salmon (or one half of salmon approx.) with above marinade. Let stand in fridge for 30 minutes to 8 hours.
Bake at 425 for 15 minutes, or slightly more until salmon flakes lightly with a fork.
Toss 6 cups of spinich with 1 tbsp of olive oil and dash of salt and pepper. Serve spinach onto plate and place cooked salmon on top before serving!

Clearly, I did not use spinach here

I added rice, and asparagus and sliced mango
I use the left over sauce from the salmon
and drizzle over the rest of the dish

I cooked the asparagus on the stove
and just added our lactose free margarine
and salt to taste:)

They all contain either lactose or galactose, the 2 compounds which need to be eliminated in the diet for galactosemia. When you are shopping for foods which are processed in any way, be sure to check that none of those ingredients are listed on the label:

ABC Juice


Apple, Beet + Carrot Juice

bunch o' apples (5)

bunch o' carrots (10)

beets (1-2)

ginger (1 inch cube)

directions

wash and cut off stems of carrots + beets

cut apples in half..... don't worry about the core + stems ......slowly feed each piece of

fruit/vegetable into juicer

makes about 2 liters of juice

15minites start to finish.


side note....
we have a juicer, obviously, and H.H. (hot husband)

recommended I photograph this process

rather than have just a shot of the glass

We have been using this program
for a year or so and I highly recommend
getting it...
highly!!!!

these are sequential movements
activating the brain pathways
for learning and attention span

for kids with Galactosemia
this is an amazing
resource

I also know many other families
who use this program for their children
who are diagnosed with
ADHD
OCD
autism
and others
and have seen HUGE!!!

like..... MASSIVE
changes in their childrens
behaviour, attention span
focus
the stories seriously bring me to tears

we aim to do this program every
morning
it takes about 10-15 minutes
that's it!

The Official First Post!!!


Peanut Butter Granola Bars

Ingredients

3c. rice crispy cereal
3c. oat(granola cereal)
1 1/2c. raisins
1/2c. sunflower seeds (or other nuts)
1 c. chocolate chips

1c. honey
3/4c.. sugar (I use brown)
1 160z jar of peanut butter (I use a 'just peanuts' one)

Directions

1. Combine all dry ingredients in a large bowl

2. Over medium heat combine sugar and honey. Bring to a boil and boil for 1 minute

3. Add peanut butter and stir.

4. Once mixed (about 1 minute) remove from heat
and combine with dry ingredients

5. Pour into a glass dish, a big one :)
I used 8x8 in. dishes this morning

start to finish 15 minutes

the kids made this one:)
